Three Bees specialty honey is honey we get from other beekeepers that harvest from a 'set crop'. You need a huge area of one kind of plant for the bees to forage on in order to get a 'set crop' or varietal honey. Some of our specialty honeys that we carry include: Buckwheat honey, Orange blossom honey, and Linden honey. These are often seasonal honey varieties and offered for a limited time throughout our season. We will be expanding our offerings in 2023 so check back often for updates.

Honeycomb is entirely edible, wax and all. The wax is thin and can be easily chewed and swallowed. Most often honeycomb is used on charcuterie boards or paired with warm bread and fancy cheeses.

  • My honey is sugared; does that mean it's no good?
No. Honey at cooler temperatures will naturally solidify. To restore your honey to it's liquid state simply boil a pot of water, turn off the heat and then place your jar of honey in the water. Do this as many times as is necessary to reliquify your honey completely. Do not place the honey over a flame as that will destroy the beneficial properties of the honey and never heat it in the microwave.

Three Bees hives are located near a forest preserve in Streamwood and on an organic farm in Marengo. Our bees forage on a variety of native prairie flowers, wildflowers, local trees and fruits and vegetables on local farms. Therefor our honey is considered wildflower honey.
  • Is your honey organic?
While we are not certified organic, our honey is produced using all organic methods. We do not use any chemicals in or around our hives. We choose our hive locations carefully in an attempt to minimize hazardous exposures to our bees. We are not certified organic as that would require us to be able to certify a 50 mile radius around our hives which we are not able to do. Also honey is produced by bees so technically all honey is organic or no honey is organic as humans can't truly know or control where bees forage.
